２４時間塩漬けにしたボラのタマゴを 塩から取り出すんだけど、やっぱり素人だねぇ、塩漬
けにするまで分からない小さなキズが、塩で絞められて広がってるよ、でもそんな事は気
にしなくてもいいんだ、どうせオカズなんだからね。
小さな事は気にしないで 今度は塩抜きだ、せっかく塩に漬けたのに塩抜きなんだってよ。
からすみを作るのに始めは、なんにも知らないで いろんな人に作り方を教わったんだ、だ
けど、訊く人によって作り方が微妙に違うんだよ、１０人に訊くと１０とおりの作り方があるっ
て事、オイラは悩んだね、そこでいちばん簡単で覚えやすい やり方でやる事にしたんだ。
塩漬けと塩抜きは、訊いた人全員が 必ずやる工程で 時間が多少違うんだけど、オイラ
が選んだやり方は、２４時間漬けて、２４時間抜くという とても覚えやすいやり方だよ。
塩抜きに使う液体は、３５度の焼酎を使うんだ、焼酎は芋とか麦とかの香りの強いもんじゃ
なくて 梅酒を漬けるような安いもんがいいんだ、タマゴに付いた塩を払い落として、ビニー
ル袋にぶっこんで、焼酎を入れて、後は２４時間冷蔵庫に入れとけば、塩抜き完了。

焼酎は、塩抜きだ！他にも日本酒、ウイスキー、ブランデーなんでもありだ、でもいちばんクセがないのが焼酎だよ、あとは殺菌の効果かな？
からすみ作りたけりゃ、あと１週間以内に河岸に来たほうがいいよ、浜で抜いたタマゴ売ってるよ。
